
I have made many, many chocolate chip cookies through the years. I mean, I do have 5 boys living in this house who really love to eat. So I’ve tried many recipes. These quick and easy chocolate chip cookies recipe is one that I have found recently and I’m in love. The right balance of sweet, the perfect soft cookie without needing to add cornstarch, and you don’t even need to refrigerate them first to make them perfect.
As a child I made chocolate chip cookies for my brothers and all of their friends. Being the oldest of 3 children, and the only girl, I was pretty famous for my chocolate chip cookies with my brother’s friends…or at least I thought I was! Every time I would bake cookies, I would just use the recipe on the back on the bag of chocolate chips. They would come out completely different every time I would make them but somehow still my brothers loved them. Sometimes they would be flat, sometimes that would be crispy, but I never really knew why until I became an adult and started researching recipes and ingredients.
I’ve now realized that the old oven I baked in was probably the wrong temperature, the butter was probably margarine, I was probably using the cheapest flour, old baking powder and soda, and not leveling my ingredients. I’ve now learned that all of these things matter with baking and I’ve been able to come up with a consistent chocolate chip cookie recipe that comes out amazing every time. Although, I really don’t think my sons would mind if they didn’t, just like my brothers didn’t mind years ago. But, when you know better you do better!

Once I make cookie dough, I don’t know about you, but I just don’t have the time to then refrigerate them for hours. Well, maybe I do and I’m just impatient for freshly baked cookies, but either way. This recipe is a breeze to make, and so, so good. These quick and easy chocolate chip cookies will become a staple in your home like they are in mine, I can pretty much guarantee it.

Quick and Easy Chocolate Chip Cookies

Ingredients
- 2/3 cup butter, softened
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla
- 1-2 cups semi-sweet or milk chocolate chips
- 1 3/4 cups purpose flour
- 1 tsp baking soda
- 3/4 tsp salt
- coarse salt for sprinkling
Instructions
- Preheat oven to 375.
- In a stand mixer, beat butter and sugars for a few minutes. You want them really light and fluffy. Scrape down sides of mixer with a rubber spatula. Add vanilla and egg. Mix again.

- Mix in the chocolate chips.
- Scoop golf-ball size spoonfuls of dough onto cookie sheet, I use THIS cookie scoop, then sprinkle each ball with a pinch of kosher or sea salt and bake for 9-11 minutes. Here in Northern Virginia 9 minutes is a perfect baking time. They should be light-colored and puffed when they come out of the oven, but dry-looking (not shiny or wet). Then, let cool on the pan for a few minutes then transfer to a cooling rack.
